Umizushi is described as a double draft game, where players try to create the highest scoring board of sea slug sushi.

The slug chips will be randomized facedown, and pushed together to form a horizontal diamond shape (amount of chips varies for player count). The outer most left and right slug chips will be flipped face-up. The bait chips will then be randomized in the game box and then placed on the bait markets A & B (equal to player count). The staring player will place the start chip on one of these markets to be used for the round.

The Start player will take one of the face-up sea slugs from either side. Any facedown slugs on the ends will then flip, expanding future options. The acquired sea slug goes on your freshly caught board (which has limited storage). Once each player has picked a slug, gameplay continues to the food phase.

The slugs come in various colors and have numbers on them. Lowest number picks bait first from the market. Ties are broken by the later picked slug. Black slugs do not have a number, but taking one will make you go last. If you choose to take the start chip, you will get the last bait chip remaining after everyone else had taken theirs. If the start chip is still there for the last player picking, they get it. Then move to the grab phase.

There will be a randomized grid of numbers that set the rules for how all players can place slugs on their own 4x3 board. In the grab phase you can feed your stocked bait to the slugs to create the potentially scoring umizushi! The bait chips also have numbers on them. The slug has to each bait equal to or higher than its number. Once placed the completed slug cannot be moved! This creates quite the puzzle as any slug that can't be placed will be wasted! Black slugs are wild and can be fed any number bait (place it as that number on your board).

You can feed 2 slugs with the same number with 1 chip that matches those numbers. Stack one slug on top of the other when placing on your board. Doing this will also earn a baby sea slug chip with a hidden number on it only you will know till scoring. These do not take up stock space. At the end of the grab phase, move all remaining bait/slugs to the stock area on your board (max 3 slugs/1 bait).

Game End is triggered when there are less slugs than players to draft from. Feed your remaining stock, place them and your earned baby slugs then score! Completed horizontal/vertical rows get points, same color rows get even more (black slugs don't count towards color, babies are wild for colors).
